Scrumptious Baked Blueberry Muffins




Ingredients: you'll need 1/4 cup oats, 1 egg, 1 tsp brown sugar, 1/4 cup (thawed or fresh) blueberries, splash of milk, dash of cinnamon, and white chocolate morsels.

Servings: I used a mini muffin pan and it made 6 mini muffins. Just double or triple the recipe to make however servings you desire!

1. Pr-heat oven to 350*.  


2. In a medium size bowl, mix in oats, egg, brown sugar, blueberries, milk and cinnamon. Stir with spoon until batter is smooth. 


            

3. Generously oil the muffin pan. You don't want your muffins to stick!


4. Cut or shred white chocolate, and sprinkle on top of muffins.  


5. Place pan in oven. Bake for 10-14 minutes or until lightly browned.  


6. Let set to cool for about 15 minutes. 7. Loosen sides of muffins with a little knife. 8. Place muffins onto cute, little plates and sprinkle with stevia for a pretty look.


These were so delicious that I wished I had made more. :)
